    New Vegan & Healthy Recipe !

    I made stuffed mushrooms from the book I posted about earlier. They were absolutely delicious. The pasta came from Oh She Glows. “Easy tomato basil cream pasta”.. and that was.. also delicious. I have a problem with measuring out ingredients, though. Although everything was fantastic and I changed things up a bit, next time I need to make the pasta sauce thicker. It was too watery in my opinion. I made this dinner for the boyfriend who is non-vegan so this was a big deal! He loved the mushrooms and I think he agreed about the pasta being a little too watery.     Healthy Pancakes!

    Oh my goodness…. Same pancakes as before, but this time I used no oil and no almond butter. Which substantially decreased fat and calories. I also used chia seeds instead of ground flax because I was out of the flax. I made the “blueberry syrup” by heating frozen blueberries and maple syrup together in the microwave. The best pancakes, I’m telling you. This time they are guilt-free because I made them healthier without the oil and chocolate nut butter syrup. I still added some dairy-free chocolate chips to the batter too. You have to try them! Recipe in one of my recent previous posts! Have a great day!!!! ūüėÄ

    New Book w/ Recipes

    Powerful Plant-Based Superfoods: The Best Way to Eat for Maximum Health, Energy, and Weight Loss by¬†Lauri Boone R.D. Just bought this book the other day. It talks about the benefits of at least 50 different plant-based Superfoods and gives recipes for them. Can’t wait to try them out. I highly recommend the book to understand more about Superfoods and to start cooking healthier meals!

    Vegan, Gluten-free, & Almost Guilt-free Pancakes

    I’m not kidding, these tasted kind of like cake. I really wish I had taken more photos for you. The only reason these are almost guilt free is because of the toppings I used, which was chocolate & almond butter. Without this, they are most certainly guilt-free and healthy! Use blueberries or other fruit and syrup if you’d like.     Need to vent!

    So my cleanse ended early on Friday with a chocolate covered pretzel and french fries for dinner. Yes, french fries as a meal. Not who I am! That’s what happens when you plan a spontaneous trip and your flight gets delayed SIX HOURS. 6!!! I was frustrated, aggravated, tired, things get thrown off track, and I was just like, what the hell. So I ended my cleanse 4 days early with some fries, lol. I’m not upset about it though. But due to my trip this weekend, my entire schedule is thrown off, I haven’t exercised since Thursday, and Fall semester starts today. Needless to say I am just, not…

    80 Days till’ Half Marathon

    Yup! 80 days. Thats less than three months! But things are going well so far (as far as training goes). I’m not rushing to get in those 10 or more milers yet, which is nice. It’s a lot easier for me to take things slow so I avoid overtraining. I only have 4 days left of this cleanse. I decided the first thing I want to have is pancakes. I have ¬†looked up recipes so far that use either oatmeal, almond flour or coconut flour. All gluten-free!     Day 9 & I still want cookies and ice cream

    Why do I still want those cookies and that ice cream from last night? It’s like a cookie-ice cream ¬†phase I’m going through WHILE on this cleanse.     7 more days left of my cleanse… The main things I was concerned about cutting out was processed carbs, grains, and starchy veggies. I didn’t officially cut out some things, however.. which was a mistake. If I don’t make it “official” I won’t all of the sudden cut it out during the cleanse, lol. So I had things like tofu and ice cream. So people didn’t really understand what I meant by a “cleanse”..and in my opinion, you can make your cleanse HOWEVER you want!     Cauliflower crust pizza!

    Vegan, gluten-free, grain free, and flour free! Cauliflower Crust Vegan Pizza     I got the recipe from: Knead To Cook I used cauliflower, nutritional yeast, ground flax + water, dried basil, ranchero herbs, tomato herb blend, and sea salt for the crust. Then topped with sauce and Daiya mozzarella cheese! I didn’t measure the flax egg too well which may be the reason why it did not bind at all. I had to eat the pizza with a spoon, lol. It was my fault for not measuring correctly (as usual!) But it was still yummy! And something I will try again.

    A wonderful weekend

    It was an a nice relaxing weekend..I didn’t take enough photos and these don’t do justice! Made my boyfriend breakfast cups… potatoes, egg, cheese, and some turkey bacon. NOT for me! I had a smoothie, and before seeing the movie Elysium we stopped at one of my favorite markets and I had lentil soup and tofu scramble. THIS is the ultimate movie experience:
