Raw Vegan Cookies

  • 1/2 cup raw almonds
  • 1/2 cup raw cashews
  • 1/2 cup raw walnuts
  • 3 tablespoons raw almond butter
  • 1 tablespoon maple syrup
  • 1 large Medjool date
  • 2 teaspoons vanilla
  • About 1 tablespoon raw chocolate coconut butter (Artisana Organic Cacao Bliss)
  • large pinch sea salt
  • 1/4 cup cacao nibs

–Blend almonds, cashews, and walnuts together to make a flour-like consistency.

–Next add the almond butter, maple syrup, date, vanilla, salt, and chocolate coconut butter and blend until dough-like consistency. I had to scrape the sides down a few times and mix a little with spatula. (The result appeared a little dry but when formed into cookies and placed in freezer they stick together well).

–Mix the cacao nibs into the mixture with spatula.

–Form them into whatever sizes you’d like (balls, bars, small cookies, or large ones). I made about 15 small cookies. They may feel a bit too oily but this goes away after freezing (they are, after all, made of 3 different kinds of nuts, almond butter, and coconut butter, lol).

–Place them on parchment paper and set in freezer.
