Although apples generally appear in your supermarket all year long, they still have their peak seasons in which you should take advantage of! This happens to be August to early start of Spring. Even though I healthy, I am trying to improve my diet by choosing foods more seasonally, among other things. When it comes to apples, my favorite opportunity to eat one is as a snack, and right now they are so fresh and delicious.
But–and I’m sure I’m not the only one who thinks this–sometimes eating an apple can get boring! Sure it’s great to grab an apple on the go, but if you have even five extra minutes, this recipe helps up the fun and delicious factor of apples. It’s also a great snack to try on your little kiddies, or if you’re an aunt (or uncle) who wants to win the heart of their little niece or nephews (like I do!), while throwing in some super foods to up the nutritional value of a plain apple.
- 1 organic apple, any kind: sliced relatively thin
- Small amount of peanut butter or PB2: spread onto each apple slice
- Optional fruit toppings: chopped strawberries, blueberries, raspberries, banana, kiwi
- Optional superfoods: hemp seeds, bee pollen, coconut flakes, cacao nibs, goji berries, chia seeds
I used chopped strawberries, hemp seeds, and cacao nibs, and I used a mixture of Earth Balance peanut spread with PB2. Many people agree the taste of cacao nibs can be quite bitter when eaten on their own, but when they are used on top of acaí bowls or like on these apple slices, they taste awesome! Don’t they look delicious? 😀

We never do much during the week (especially drink), so this Wednesday morning feels very off. It was worth it though!
