It felt like I was in the kitchen all day Sunday, experimenting with muffins, acai bowls, and kale salad. I am first going to point out that, I am not a baker. I can cook pretty well, but baking is something I have not had much experience with. For one thing, measurements for baking usually need to be exact, and if you haven’t noticed through out my blog, I hardly ever measure ingredients. You can get away with this in cooking, but not as much with baking. So more often then not, my baking usually resembles an experiment, and the tasters are my guinea pigs. It’s either a hit or a miss.
Anyway, my first attempt at making the muffins yesterday failed, but luckily the 2nd attempt was a success. They are a peanut buttery, chocolatey banana flavored. Some of my favorite ingredients in one recipe, no wonder I chose these to make! The recipe calls for vanilla flavored protein, but I used Vega’s chocolate protein.
I highly recommend these muffins, called Banana and Peanut Butter Swirl Protein Muffins, which I found the recipe from ifoodreal.com. I will definitely make these again and play around a little bit more with the ingredients.
My next recipe, also coming from ifoodreal.com, was a Healthy Creamy Mexican Kale Salad. The only thing thing I did differently was double the recipe. This is also a recipe I will make again. The Student Dietetic Association that I am apart of had a potluck this afternoon, so these were the items I brought. Everyone seemed to enjoy both, and I even had one nice girl tell me multiple times she loved the muffins and she wants the recipe. That’s always a nice thing to hear at a food potluck. 🙂
