Raw stir fry salad

I usually throw these exact same ingredients into a pan and cook them in coconut aminos, liquid aminos, and tamari. Tonight I was craving something raw but just as delicious for dinner, so I made my usual stir fry into a salad and topped with the soy sauces and a little ginger dressing. It’s so easy to make, and if you don’t have a veggie spiralizer you can use a julienne slicer.

Raw Stir Fry Salad

  • Servings: 1

Ingredients:

  • half zucchini
  • shredded carrots
  • mushrooms (any kind!)
  • mixed lettuce
  • sprouted tofu
  • taco seasoning (or other spices)
  • sesame seeds
  • green onion
  • ginger miso dressing (I use OrganicVille brand) 

Slice or cube tofu how you would like and cook in a pan with taco seasoning. I used very little seasoning and I used a few splashes of water to cook the tofu. In the meantime, use a spiralizer to make the zucchini into noodles, or just using a julienne peeler to make wider noodles. Chop your veggies, add them with the tofu in a bowl, top with the sesame seeds and dressing.

phocookietoThis still fits my cleanse minus the tiny bit of coconut oil I used! I only made about 4 small cookies and I didn’t measure anything! I tend to look up multiple recipes and  just get an idea of the ingredients and measurements to use.

*Almonds ground into a flour-like consistency, couple dates, PB2, agave, coconut oil, vanilla extra, baking powder, and some dairy-free chocolate chips.

“That time of the month” calls for a little TLC!! :] Other than the guilt-free cookies, my cleanse has been going well. My appetite is heavy today but I’m convinced that’s because it’s…”that time of the month.” I have successfully stuck to the cleanse, though!  And I have been craving soup the last few days. I had that homemade soup for dinner last night, soup for breakfast (split pea-Dr. McDougall), and soup for lunch. I seriously want to have soup for dinner too. Weird..
